I received this recipe from a generous lady making copies of it while working at OfficeMax. I mentioned how delicious the cheesecake cookies sounded, and she insisted that I took a copy for myself.
Ingredients
1/3 cup brown sugar, packed
1 cup flour
1/2 cup walnuts, chopped (I sub pecans for the walnuts)
1/3 cup melted butter
1 pkg. (8 oz.) cream cheese
1/4 cup granulated sugar
1 egg
1 tablespoon lemon juice
2 tablespoons milk or cream
1 teaspoon vanilla extract
Instructions
Mix brown sugar, flour, and chopped nuts together in large bowl. Stir the melted butter, mix with your hands until light and crumbly. Remove 1 cup of the mixture to be used later as topping. Place remainder in an 8 inch square pan and press firmly. Bake at 350 degrees for about 12 - 15 minutes
Beat cream cheese with the 1/4 cup granulated sugar until smooth. Beat in the egg, lemon juice, milk and vanilla. Pour this into the baked crust.
Top with reserved crumbs. Return to a 350 degree oven and bake for about 25 minutes. Cool thoroughly; then cut into 2-inch squares. These can be baked the day before. Cover with plastic wrap and keep refrigerated.
